Sarah Schafer, the chef at Portland, OR's 501 grill & Tavern, comes from a long line of gardeners. Her grandfather, who lived in Buffalo, NY, grew orchids in his basement and an array of vegetables in his backyard. But as Schafer told me recently, he "loved loved loved tomatoes." Starting at age 15, he planted the heirloom seeds his mother had saved from her parents, who had grown them in Baden-Baden, Germany, and he was pleased with the results. To him, the perfect way to eat them was fresh, sprinkled with salt and a bit of mayonnaise.

I love grapefruit, though, so Andy instead suggest a Sauvignon Blanc (another one of his go-to brunch sips) which stands up nicely to my slightly spicy scrambled egg "nachos" with tomatillo salsa.

Portland monthly: The New Tillamook Creamery Is a Dairy-Lover’s Dream Come True

The ground floor of Tillamook’s two-story site boasts a “food hall” style dining area that offers both classic and new menu items developed, in part, by Sarah Schafer, executive chef/owner of Portland’s 501 grill & Tavern. That means everything from Tillamook’s classic melted grilled cheese to a smoked-provolone and Monterey jack base for the creamery’s bacon & beer mac ‘n’ cheese.

CHEF SARAH SCHAFER WINS SKUNA BAY SALMON KENTUCKY DERBY CHEF CHALLENGE

After eight grueling first round competitions pitting 28 chefs followed by two Semi Final battles, the Final competition at the Kentucky Derby in Louisville, KY was won by Chef Sarah Schafer from 501 grill & Tavern in Portland, OR.
